Ben’s Beef Lasagne

(Serves 4-6)

My mum and sister don’t often let me in the kitchen, but when it comes to making lasagne I’m really the only man for the job. I perfected this recipe at university and it’s one we use time and time again. This meal is perfect comfort food come winter or summer, and is delicious heated up the next day if you have any leftovers. Made with quality, freshly minced Mince Beef, I either make it during the week for the family or for friends on a Saturday night to have with a few beers.

You will need:

600g beef mince | 1 pack fresh lasagne sheets | 2 jars tomato and basil pasta sauce | good handful of frozen sweet corn (optional) | 1 garlic clove finely chopped | 1 pot of cheese sauce | cheddar to grate on top (try Andrew’s Black Bomber or Mature Farmhouse cheddar

How to

-Preheat the oven to 190C
-Brown off the mince and chopped garlic in a large shallow frying pan on a high heat. Really try to brown the mince, not just cook until grey- this will give more flavour!
-If using, add the sweet corn and continue to cook at a high heat, until any excess liquid is cooked off.
-Add a layer of mince to a large ovenproof dish. Cover with a thin layer of cheese sauce.
-Add enough sheets of lasagne to cover the first layer.
-Repeat these last few steps… A layer of mince, layer of cheese sauce, pasta sheets… until you’ve used up all ingredients. On top of the final sheets of lasagne, add the last bit of cheese sauce and sprinkle with grated cheddar over the top to cover.
-Bake in the oven for 30-35 minutes until golden brown on top.

Serve with salad, chips, bread, or simply by itself.
